INGREDIENTS
2 Espinaler Green Olives
2 Espinaler Anchovy Fillets
2 DO Gourmet Pickled Chilli Peppers (Pipparras)
1 slice rustic bread, toasted
80–100 g sirloin beef, finely diced
1 egg yolk
1 teaspoon mustard
A few drops of Worcestershire sauce
A pinch of salt
A pinch of black pepper
A pinch of chopped chives
A few edible flowers, optional
INSTRUCTIONS
1. Toast the bread until golden and crisp.
2. In a bowl, combine the finely diced sirloin beef with the egg yolk, mustard,
Worcestershire sauce, salt, and black pepper. Mix gently until well combined.
3. Spoon the steak tartar generously onto the toast.
