Our anchovies are caught in the Cantabrian Sea in spring. After a period of marinating in brine, they are meticulously cleaned one by one, filleted, packaged by hand, and preserved in olive oil. With an excellent flavor, juicy flesh, and just the right amount of salt, anchovies are one of the most appreciated seafood dishes and are used as a traditional side dish or as an ideal addition to salads, canapés, or sandwiches.
