The belly is the juiciest and most tender part of the white tuna, named for its location closest to the head, in the "belly" area. Thanks to its higher fat content than the loins, we enjoy the exquisite flavor of its tender slices bathed in olive oil, achieving an unparalleled balance of delicacy and flavor.
